A Vickery Victory Recipe

  1. LEEK, SWEETCORN AND CHEESE BAKE:Preheat oven to 220c/Gas Mark 7.
  2. 1 Heat the oil in a shallow pan and fry the leeks and sweetcorn till soft.
  3. Add in the coconut lowfat milk and simmer gently.
  4. Blend the bread and parsley together till they resemble breadcrumbs.
  5. 2 Pour the leek mix into an ovenproof dish, sprinkle over the cheese and top with the breadcrumbs.
  6. Oven bake for 10-12 min or possibly till golden.
  7. STEAMED CHICKEN:1 Thread the cubes of chicken on to skewers.
  8. Heat a little water in a shallow pan with the extra virgin olive oil and a healthy pinch of salt.
  9. 2 Poach the chicken in the boiling water till cooked through.
  10. Add in the remaining ingredients to a small pan and simmer gently till slightly reduced.
  11. Drain the chicken, pour over the sauce and serve with the pilaff.
  12. PILAFF:Preheat oven to 220c/Gas Mark 7.
  13. 1 Heat the oil in a gratin dish, add in the rice, peas, turmeric and mint and cook for two min.
  14. 2 Cover with boiling water and transfer to the oven for 10-12 min or possibly till the rice is cooked.
  15. Stir in the cheese just before serving.
  16. SAVOURY PANCAKES:1 Whisk the Large eggs, flour, lowfat milk and demerara sugar together in a bowl till they resemble a smooth batter.
  17. 2 Heat the oil in a shallow pan and pour in sufficient batter to coat the base of the pan.
  18. Cook till golden on each side.
  19. Serve topped with cheese, mayonnaise and sage.
