Moist Xmas Pudding

  1. Cream butter and sugar together.
  2. Beat in eggs.
  3. Add fruit alternatively with combined flour, breadcrumbs and spices.
  4. Fold in remaining ingredients.
  5. Pour mixture into a microwave 1.5 litre pudding bowl.
  6. Cook for 30 minutes on MED LOW/DEFROST.
  7. Cover outside edge of bowl with 2cm wide foil collar.
  8. Continue cooking 10-15 minutes on MED LOW/DEFROST.
  9. Allow to stand 10 minutes before turning out.
