Bacon & Broccoli Casserole with a Kick

  1. Heat oven to 350F.
  2. Cook broccoli in boiling water in large saucepan 5 min.
  3. or until crisp-tender; drain.
  4. Rinse with cold water; drain well.
  5. Meanwhile, cook bacon in same saucepan on medium heat until crisp.
  6. Remove bacon from skillet with slotted spoon; drain on paper towels.
  7. Discard all but 2 Tbsp.
  8. drippings from skillet.
  9. Add onions to reserved drippings; cook and stir 4 min.
  10. or until crisp-tender.
  11. Stir in flour.
  12. Gradually stir in milk until blended; cook and stir 3 min.
  13. or until thickened.
  14. Add cheese; cook and stir 3 min.
  15. or until melted.
  16. Remove from heat.
  17. Stir in broccoli and bacon; spoon into 1-1/2-qt.
  18. casserole sprayed with cooking spray.
  19. Top with cracker crumbs.
  20. Bake 25 min.
  21. or until heated through.
