Pasta E Fagioli
- 1 1/2 cups rinsed cancelling beans
- 2 cups canned unsalted whole tomates with juice
- 1 cup sliced celery
- 1 teaspoon minced garlic
- 2 cups canned low sodium chicken broth
- 1 cup water
- 1/4 cup acini di pepe pasta or 1/4 cup other small shell pasta
- 2 tablespoons olive oil
- 1/2 cup chopped fresh basil
- salt and pepper
- 4 tablespoons grated parmesan cheese
- Place beans, tomatoes with juices, celery and garlic in a large saucepan.
- Add chicken broth and 1 cup water.
- Bring to a boil, breaking up tomatoes with the edge of a spoon.
- Cover, lower the heat to medium and simmer 10 minutes.
- Add oil and pasta.
- Boil, uncovered, about 8 minutes or until pasta is tender.
- Add basil and salt and pepper to taste.
- Serve and bowls and pass the Parmesan to sprinkle on.
