Chilled Cucumber and Red Bell Soup With a Kick
- 2 large cucumbers, peeled and cored
- 12 large red bell pepper, cored
- 3 tablespoons rice wine vinegar
- 4 tablespoons fat free sour cream
- 3 tablespoons chicken broth
- 12 teaspoon salt
- 14 teaspoon cayenne pepper
- 14 teaspoon ground oregano
- 14 teaspoon ground coriander
- 3 ice cubes
- Chop the cucumber and bell pepper.
- Add all ingredients to the blender and puree.
- Add more liquid if needed.
- Adjust taste to your liking.
- Store in the fridge until ready to serve or serve right away.
