Easy Beef Bourguignon
- 1 beef top round steak (2 lb./900 g), cut into 1/2-inch cubes King Sooper's 1 lb For $3.77 thru 02/09
- 1/4 cup flour
- 2 Tbsp. oil
- 3 carrots (6 oz./170 g), peeled, cut into 3/4-inch-thick slices Target 2 lb For $3.00 thru 02/06
- 2 cups pearl onions, trimmed, peeled King Sooper's 1 lb For $0.99 thru 02/09
- 1 can (19 fl oz/540 mL) stewed tomatoes, undrained
- 1 cup dry red wine
- 1 cup brewed strong Maxwell House Original Roast Coffee Rite Aid $5.99 thru 02/06
- 1/2 tsp. each dried oregano leaves and dried thyme leaves
- 2 bay leaves
- 2 cups small mushrooms
- Coat meat with flour.
- Heat oil in Dutch oven or large deep skillet on medium-high heat.
- Add meat; cook and stir until evenly browned.
- Add all remaining ingredients except mushrooms; stir.
- Bring to boil; simmer on low heat 1 hour.
- Add mushrooms; simmer 30 min.
- or until meat is tender.
- Remove and discard bay leaves.
