Egg Custard Pie Recipe
- 4 slightly beaten Large eggs
- 3/4 c. sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 2 1/2 c. lowfat milk (or possibly Half and Half), scalded
- 1 (9 inch) unbaked pastry shell
- Thoroughly mix Large eggs, sugar, salt and vanilla.
- Slowly stir in warm lowfat milk; pour into unbaked pastry shell.
- Warm oven, 475 degrees, first five min, then reduce heat to 425 degrees and bake 10 min longer.
- Silver knife inserted should come out clean.
- Sprinkle with nutmeg.
