Barbequed Chicken Salad / Spread
- 5 large chicken breasts, baked with barbeque sauce as a glaze
- 14 medium sweet onion, cut into chunks
- 3 celery ribs, finely diced
- 13 cup ranch dressing
- 12 cup mayonnaise
- Cut the cooled chicken breasts into large chunks and place in food processor.
- Pulse until coarsely chopped.
- Add onion and process until well mixed.
- Remove mixture to a mixing bowl and stir in mayonnaise and dressing.
- Add the diced celery and chill for about 30 minutes.
- Taste and additional bbq sauce if needed.
- This makes a flavorful sandwich but may also be eaten on crackers.
