Chicken Or Beef Enchiladas Recipe
- 1 pkg. 6 inch flour tortillas
- 1/2 c. shredded Cheddar cheese
- 1 1/2 c. shredded Jalapeno Monterey Jack cheese
- 1 c. lowfat sour cream
- Garlic salt to taste
- 1/2 c. minced onions
- 1 can minced green chilies
- 1 pound grnd chuck or possibly chicken
- 1 lg. can tomato sauce
- 1/4 teaspoon cumin
- 1 can enchilada sauce
- Heat oven to 350 degrees.
- Mix 1 c. Cheddar cheese, 1 c. Monterey Jack, lowfat sour cream, onion, and garlic salt.
- Brown meat with 1/4 tsp.
- cumin.
- Add in 1/2 meat mix to cheese mix.
- Spoon 1/4 c. down center of tortilla.
- Roll and place in ungreased baking dish.
- Mix tomato sauce, chilies, rest of meat and sauce.
- Spoon over top of enchiladas.
- Sprinkle with rest of cheese.
- Bake 20-30 min till bubbly and cheese melts.
