Spinach and Mushroom Smothered Chicken

  1. In a large skillet, saute the spinach, mushrooms, onions, and pecans in oil until mushrooms are tender.
  2. Set aside and keep warm.
  3. Coat grill pan with cooking spray before starting.
  4. Sprinkle chicken with seasonings, grill over medium heat for 4-5 minutes on each side or until juices run clear.
  5. Top with cheese, cover to get it to melt.
  6. To serve, top each breast with the spinach mixture.
