Comfort Chinese Udon Noodles with Chicken and Bok Choy
- 2 servings Cooked udon noodles
- 2 head Bok choy
- 1/2 Chicken thigh or breast
- 1/4 Onion
- 1/4 Carrot
- 2 Shiitake mushrooms
- 700 ml Water
- 1 heaped tablespoon Chicken stock granules
- 1/2 tbsp Soy sauce
- 1 tsp Sugar
- Thinly slice the chicken and cut the vegetables into bite-size pieces.
- In a pot, bring water to a boil and add the seasonings and vegetables except the green parts of bok choy.
- Lower the heat and cook until vegetables are softened, about 10 minutes.
- Skim off the scum if necessary.
- Add the green parts of bok choy and noodles and cook another 5 minutes and it's done.
- With cabbage, carrots, onion, shimeji mushrooms, pork ham.
