Grape Nut Roll (Soutzouki)

  1. In a large deep pot bring juice and honey or sugar to a vigorous boil.
  2. Add pectin and boil 5 minutes.
  3. Dissolve citric acid first in a tablespoon of hot syrup, then add to the rest of the syrup, mixing it in.
  4. Add nuts.
  5. Dissolve cornstarch in cold water and mix into syrup, stirring quickly.
  6. Cook 1 minutes more.
  7. Ladle thick mixture on to heavy waxed paper.
  8. Make a long thick roll.
  9. Pick up two sides of paper and press together to make a fat sausage of candy.
  10. Let set at room temperature.
  11. Store in plastic bag.
  12. Slice as needed.
