Stuffed Chicken Quarters
- 2 Tbsp. butter or margarine
- 2 medium zucchini, shredded (about 2 cups)
- 1 medium onion, chopped
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- 1 cup KRAFT Mexican Style Finely Shredded Four Cheese
- 2 whole chickens (3 lb. each), quartered
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 3/4 cup KRAFT Sweet Honey Barbecue Sauce
- Preheat oven to 400F.
- Melt butter in medium saucepan on medium heat.
- Add zucchini and onion; cook and stir 2 minutes or until tender.
- Remove from heat.
- Stir in dry stuffing mix and cheese until well blended.
- Insert fingers carefully between the meat and skin of each chicken quarter to form a pocket.
- Fill pockets evenly with stuffing mixture.
- Place, skin sides up, in large roasting pan.
- Sprinkle with salt and pepper.
- Bake 45 minutes or until chicken is cooked through, brushing with the barbecue sauce after 35 minutes.
