Raspberry Coulis

  1. Puree the raspberries, water, sugar, and juice.
  2. Using a wooden spoon, push the puree through a fine sieve into a bowl, discarding the seeds.
  3. Taste and adjust the flavor with sugar or juice if needed.
  4. Cover and refrigerate at least 1 hour, until chilled.
