Pita Bread
- 4 1/2 to 5 c. flour, separated
- 1 pkg. yeast
- 1 1/2 tsp. sugar
- 1 1/2 tsp. salt
- 1 3/4 c. warm water
- 2 Tbsp. oil
- In a warm mixer bowl, combine 2 c. flour, yeast, sugar, salt and water.
- Blend until moistened, then beat by hand for 3 minutes. Stir in 2 1/2 to 2 3/4 c. flour to make firm dough.
- Knead on floured board until smooth and elastic, about 10 minutes.
- Cover dough with plastic wrap and towel.
- Let rise for 20 minutes.
- Punch down dough.
- Divide into 12 equal parts.
- Shape each part into a smooth ball and place on floured board leaving space between each ball.
- Cover and let rise 30 minutes.
- Preheat oven to 500u0b0.
- Roll each ball into a 6 inch circle.
- Place 3 circles at a time on a cookie sheet and bake 3 to 4 minutes.
- (They do not burn.)
- Cool on racks.
