Barfi

  1. Heat 1 cup ghee and roast maida until a nice smell emanates and it turns a light pink.
  2. Remove and set aside.
  3. In the same vessel heat 1 cup ghee and roast rawa until pink.
  4. Prepare a sugar syrup by boiling the sugar in 1/2 cup water.
  5. Mix the roasted maida, rawa and syrup, adding the flavourings.
  6. Mix well and pour into a well greased thali.
  7. Cool, cut and store.
