Barfi
- 1 cup maida
- 1/2 cup rawa
- 2 cups sugar
- 2 cups ghee
- 1 dash elaichi powder
- 2 to 3 sm. grains kapur
- Heat 1 cup ghee and roast maida until a nice smell emanates and it turns a light pink.
- Remove and set aside.
- In the same vessel heat 1 cup ghee and roast rawa until pink.
- Prepare a sugar syrup by boiling the sugar in 1/2 cup water.
- Mix the roasted maida, rawa and syrup, adding the flavourings.
- Mix well and pour into a well greased thali.
- Cool, cut and store.
