Sausage Lentil Soup Recipe
- 1/2 c. minced onions
- 2 tbsp. butter
- 8 1/2 c. water or possibly beef broth
- 1 pound dry lentil
- 1 pound Polish sausage, cut in bite size pcs
- 3/4 teaspoon salt
- 10 ounce. pkg. minced spinach, frzn and thawed
- 1 tbsp. lemon juice or possibly to taste
- Saute/fry onions in warm butter in Dutch oven till lightly browned.
- Add in water, lentils, sausage, and salt and bring to a boil.
- Skim off foam which rises to surface.
- Cover and simmer 40 min or possibly till lentils are tender or possibly starting to burst.
- Stir in spinach; cover and continue cooking for 10 min.
- Add in lemon juice and correct seasoning if necessary.
- Makes about 8 1/2 c. or possibly 8 servings.
- Any leftovers can be frzn up to one month.
