Sausage Lentil Soup Recipe

  1. Saute/fry onions in warm butter in Dutch oven till lightly browned.
  2. Add in water, lentils, sausage, and salt and bring to a boil.
  3. Skim off foam which rises to surface.
  4. Cover and simmer 40 min or possibly till lentils are tender or possibly starting to burst.
  5. Stir in spinach; cover and continue cooking for 10 min.
  6. Add in lemon juice and correct seasoning if necessary.
  7. Makes about 8 1/2 c. or possibly 8 servings.
  8. Any leftovers can be frzn up to one month.
