Summer Squash Dish
- 2 cups yellow squash
- 1 zucchini
- 12 lb mushroom
- 1 onion
- 2 tablespoons olive oil
- 2 cups cheese
- 10 34 ounces mushroom soup
- 12 cup sour cream
- 12 teaspoon salt
- 1 cup cracker
- 1 tablespoon butter
- Thinly slice yellow squash and zucchin.
- Wash and slice mushrooms.
- Slice onion.
- In sauce pan add olive oil and saute all above.
- DRAIN.
- Combine vegetables , 2 cups grated cheese, 1 can mushroom soup, 1/2 cup sour cream and 1/2 teaspoon salt.
- Grease a casserole and add all.
- Crush crackers like ritz and mix in 1 tablespoon butter.
- Put on top of vegetables.
- Bake 25-30 minutes in 350 degree oven.
