Japanese-Style Tofu and Chicken Burgers
- 1 block Tofu (firm)
- 250 grams Ground chicken
- 1 bunch Shiso leaves
- 1/4 of a carrot Carrot
- 1 tsp Grated ginger
- 4 tbsp Grated daikon radish
- 1 add (to taste) Green onion or scallion
- 1 Salt and pepper
- 1 tsp Sesame oil
- 1 tbsp Katakuriko
- 1/2 Egg (whole egg)
- 1 tbsp Soy sauce
- 1 tsp Sugar
- 150 ml Water
- 2 tbsp Soy sauce
- 1 tbsp Sake
- 1 tbsp Vinegar
- 2 tbsp Sugar
- 2 tbsp Katakuriko slurry
- Drain the tofu.
- We usually put it on a sieve and put a plate on it, and leave it for about 15 minutes.
- While you wait for tofu to drain, finely chop the carrot and shiso leaves and grate the ginger.
- Grate the daikon radish and chop the green onion also.
- Mix the drained tofu, carrot, shiso leaves, ginger and the ingredients together well by hand.
- Make the sauce.
- Heat the ingredients in a pan, and thicken by adding katakuriko mixed with water when the sauce comes to a boil.
- Fry the burgers.
- Heat oil in a pan, put in the formed burger patties, cover the pan, and pan fry both sides of of the burgers over medium heat.
- Put the burgers on a serving plate, pour the sauce over them and put , grated daikon radish and chopped green onion on top to finish.
