Pizza Luces Baked Potato Pizza

  1. Make your favorite pizza dough, or take it out of the package if youre scared of yeast like me.
  2. I bought mine at Trader Joes.
  3. Dont judge me, I make pie crust.
  4. Roll out to about 12, building up the edge a bit for the crust.
  5. Poke holes all around the middle with a fork.
  6. Bake as directed until the center just starts to turn golden brown.
  7. I really recommend using a sheet with holes in the bottom or a baking stone if you want a crispy bottom.
  8. And check it about halfway through.
  9. If the holes baked closed and your crust is all puffed up, poke it a few more times with a fork.
  10. Meanwhile, steam the broccoli for 10-12 minutes until it is soft.
  11. When the crust is done, spread the mashed potatoes evenly over the center.
  12. Note: if you need to make some mashed potatoes, a basic recipe is fine.
  13. I simply diced 1 pound of potatoes and boiled them until soft, then mashed them with 2 tablespoons of sour cream and a couple of splashes of milk until they were smooth and creamy.
  14. Sprinkle broccoli and tomatoes over the potatoes.
  15. Cover everything with cheese.
  16. Continue baking until the cheese is melted, about 10-15 minutes.
