Tilapia with Mediterranean Salsa
- 2 cups roasted red peppers, chopped
- 2 cups shallots, chopped
- 1-1/2 cups pitted green olives, chopped
- 3/4 cup fresh Italian parsley, finely chopped
- 3/4 cup Kraft Balsamic Vinaigrette Dressing
- 6 Tbsp. fresh lime juice Safeway 3 ct For $1.00 thru 02/09
- 24 each tilapia fillets (4 oz./115 g each) Walmart Supercenter 1 pkg For $10.98 thru 02/14
- 1 gal. hot cooked long-grain brown rice
- 6 Tbsp. Kraft Shredded Parmesan
- Combine all ingredients except fish, rice and cheese.
- For each serving: Place 1 fish fillet on parchment paper-covered rimmed baking sheet; top with 1/4 cup (50 mL) of the pepper salsa.
- Bake in 400 degrees F standard oven 15 min.
- or until fish flakes easily with fork.
- Serve over 2/3 cup (150 mL) rice.
- Sprinkle with 3/4 tsp.
- (3 mL) cheese.
