Tilapia with Mediterranean Salsa

  1. Combine all ingredients except fish, rice and cheese.
  2. For each serving: Place 1 fish fillet on parchment paper-covered rimmed baking sheet; top with 1/4 cup (50 mL) of the pepper salsa.
  3. Bake in 400 degrees F standard oven 15 min.
  4. or until fish flakes easily with fork.
  5. Serve over 2/3 cup (150 mL) rice.
  6. Sprinkle with 3/4 tsp.
  7. (3 mL) cheese.
