Spinach-Cheese Pie

  1. Cook spinach until done, strain thoroughly.
  2. Saute onion in olive oil.
  3. Lightly coat a large casserole dish with butter.
  4. Layer strips of filo dough in dish (6 sheets with melted butter brushed between layers).
  5. Combine spinach, cheeses, onion and herbs and spices; spread mixture in casserole dish.
  6. Put filo dough on top, tuck in edges and drizzle butter on top.
  7. Slit top of dough to let steam escape.
  8. Bake at 400F for 20 to 30 minutes until dough browns.
