Spinach-Cheese Pie
- 2 lb. chopped spinach
- 1 lb. Feta cheese, crumbled
- 8 oz. Cheddar cheese, chopped
- grated
- 1 lg. onion, chopped
- Filo dough
- 3 tbsp. olive oil
- Butter
- Herbs and spices, to taste (dry mustard, oregano, sage, salt and pepper)
- Cook spinach until done, strain thoroughly.
- Saute onion in olive oil.
- Lightly coat a large casserole dish with butter.
- Layer strips of filo dough in dish (6 sheets with melted butter brushed between layers).
- Combine spinach, cheeses, onion and herbs and spices; spread mixture in casserole dish.
- Put filo dough on top, tuck in edges and drizzle butter on top.
- Slit top of dough to let steam escape.
- Bake at 400F for 20 to 30 minutes until dough browns.
