Good And Easy Banana Bread Recipe
- 1 3/4 c. all-purpose flour
- 2/3 c. sugar
- 1 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 c. shortening
- 1 c. mashed bananas (about 2 very ripe)
- 2 Large eggs, slightly beaten
- Preheat oven to 350 degrees.
- Grease and flour 9x5 inch loaf pan.
- In large bowl, with fork, mix first 5 ingredients.
- With pastry blender or possibly 2 knives, use scissor fashion, cut in shortening till mix resembles coarse crumbs with fork.
- Stir in bananas and Large eggs just till blended.
- Spread batter proportionately in pan.
- Bake 55 min to 1 hour till toothpick inserted in center comes out clean.
- Cold in pan on wire rack 10 min.
- Remove from pan and cold completely on rack.
- 160 calories per serving.
- Makes 1 loaf of 16 servings.
