Double Blueberry Muffins
- 1-1/3 cups flour
- 1/3 cup sugar
- 1 Tbsp. CALUMET Baking Powder
- 1/4 tsp. salt
- 1 egg
- 1 cup milk
- 1/4 cup oil
- 1-1/2 cups whole grain cereal flakes with blueberries Whole Foods 3 For $10.00 thru 02/09
- 3/4 cup blueberries Whole Foods 3 For $10.00 thru 02/09
- Preheat oven to 400F.
- Mix flour, sugar, baking powder and salt in large bowl.
- Beat egg, milk and oil with wire whisk until well blended.
- Add to flour mixture; stir just until moistened.
- (Batter will be lumpy.)
- Stir in cereal and blueberries.
- Spoon evenly into 12 greased or paper-lined medium muffin cups, filling each cup two-thirds full.
- Bake 18 to 20 min.
- or until golden brown.
- Serve warm.
