Veal With Capers Recipe
- 6 to 8 veal cutlets
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/3 c. flour
- 1 tbsp. butter
- 1 tbsp. extra virgin olive oil
- 2 tbsp. butter
- 2 tbsp. lemon juice
- 1/4 c. chicken broth
- 1 tbsp. capers
- 1 tbsp. minced parsley
- Coat the veal cutlets in 1/3 c. flour, salt and pepper.
- In frying pan heat 1 Tbsp.
- of butter and 1 Tbsp.
- extra virgin olive oil.
- Cook veal for 1 minute on each side.
- Then transfer veal to warming dish.
- In the same pan, add in 2 Tbsp.
- butter, 2 Tbsp.
- lemon juice, 1/4 c. chicken broth and cook 1 minute.
- Then add in 1 Tbsp.
- capers and 1 Tbsp.
- minced parsley.
- Mix together and serve over veal.
- 6 servings.
