Veal With Capers Recipe

  1. Coat the veal cutlets in 1/3 c. flour, salt and pepper.
  2. In frying pan heat 1 Tbsp.
  3. of butter and 1 Tbsp.
  4. extra virgin olive oil.
  5. Cook veal for 1 minute on each side.
  6. Then transfer veal to warming dish.
  7. In the same pan, add in 2 Tbsp.
  8. butter, 2 Tbsp.
  9. lemon juice, 1/4 c. chicken broth and cook 1 minute.
  10. Then add in 1 Tbsp.
  11. capers and 1 Tbsp.
  12. minced parsley.
  13. Mix together and serve over veal.
  14. 6 servings.
