Light and Fluffy Oreo Muffins
- 100 grams Margarine (or butter)
- 110 grams Sugar
- 240 grams Cake flour
- 8 grams Baking powder
- 2 Egg
- 120 grams Milk
- 60 grams Oreos
- Sift the flour and the baking powder together on an old newsprint paper.
- Break up the Oreos into fine pieces as seen in the photo.
- Mix together the margarine and sugar until the mixture becomes light in color.
- Add the egg (warmed to body temperature using a double boiler) little by little.
- Add in a little bit of the dry ingredients and mix.
- Mix in a little bit of milk.
- Repeat Steps 5 and 6 about 4~5 times (dry ingredients --> milk --> powdered ingredients --> milk) Make sure to start with the dry ingredients and end with the milk.
- Mix in the Oreos and the batter is complete.
- Pour into the cups a little more than halfway.
- Bake for 15 - 20 minutes at 180 degrees C. Once they're baked, they're done.
- I used this margarine that was given to me for being a tester.
- This margarine has a very nice taste and has a fluffy finish to the baked goods.
- They're perfect for large muffins too Please enjoy in your favorite containers.
- If you add large pieces of crushed Oreos on top right before baking, it'll look completely different.
