Avacado Salad Souffle Recipe
- 1 pkt (3-ounce) lime gelatin
- 1 c. Warm water
- 1 can (20-ounce) crushed pineapple, liquid removed, reserve juice
- 1 c. Minced avacado
- 1/2 c. Minced pecans
- 2 Tbsp. Lemon juice
- 1/2 c. Mayonnaise
- 1/2 c. Cream, whipped
- 1 pch Salt
- Dissolve gelatin in warm water; let cold.
- Add in lemon juice, pineapple juice, mayonnaise and salt.
- Blend well in mixer and allow to refrigeratetill thickened.
- Pour into ice trays in freezer for a few min.
- Turn into mixing bowl; beat till fluffy.
- Mix in cream, avacado, nuts and pineapple.
- Pour into molds.
- Serves 12-16.
