Burdock With Peanuts Recipe

  1. Wash burdock, scrape off thin brown skin with back of knife and soak in water.
  2. Cut into 1 1/2- to 2-inch pcs; cut these lengthwise into 4 pcs.
  3. Combine the simmering ingredients and bring to a boil.
  4. Simmer the burdock till tender.
  5. Toast peanuts and remove skins.
  6. Chop and add in sugar and salt.
  7. Drain burdock and coat with the peanut mix.
  8. This recipe yields 4 servings.
