Easy Chicken Stew Recipe
- 1 lg. onion, minced
- 2 whole chicken breasts, skinned and boned
- 1 (14 1/2 ounce.) can and 1 (10 3/4 ounce.) can chicken broth
- 1 lg. bag frzn mixed vegetables
- 2 (10 3/4 ounce.) cans potato soup
- Salt and pepper to taste
- Fresh mushrooms, sliced or possibly 1 can sliced mushrooms
- 1 tbsp. coriander or possibly to taste
- In large kettle, saute/fry onions till soft.
- Cut chicken breasts into large bite size pcs.
- Add in to onions and saute/fry till chicken is slightly brown.
- Add in broth and let simmer about 10 min.
- Add in mixed vegetables and continue cooking 15 min.
- Add in potato soup and salt, pepper, and coriander to taste.
- Add in mushrooms and continue cooking till mushrooms are done.
