Pancake Mix Cream Cheese Apple Cake
- 100 grams Cream cheese
- 50 grams Sugar
- 1 Egg (large)
- 100 grams Pancake mix
- 1 Apple
- Put the cream cheese in a bowl and wrap with plastic wrap.
- Microwave (at 500 W) for about 50 seconds to soften, then beat with a whisk.
- Add the sugar and mix until smooth.
- Add the egg and mix.
- Add the pancake mix and fold with a rubber spatula until there are no flour streaks.
- Cut the apple into about 5 mm thick wedges and mix it into the batter.
- Line the pan with kitchen parchment paper and pour in the batter.
- Smooth the top of the batter.
- Holding the pan with both hands, hold and drop it a few times onto a table to remove any air bubbles in the batter.
- Bake in an oven preheated to 180 Celsius for about 35-45 minutes.
- (See Helpful Hints) When a skewer or toothpick inserted in the middle comes out clean, it is done.
- I added 30 g of rum raisins to boost the flavor!
- You can also use regular raisins if serving to children.
