Blackened Fish

  1. Mix stuffing mix, water and butter; let stand 5 min.
  2. Stir.
  3. Spoon onto fish; roll up, starting at 1 short end of each fillet.
  4. Secure with toothpicks; set aside.
  5. Mix seasonings in shallow dish.
  6. Add fish; turn to evenly coat all sides of each roll-up.
  7. Heat oil in large skillet.
  8. Add fish; cook 20 min.
  9. or until browned on all sides and fish flakes easily with fork, turning occasionally.
  10. Discard toothpicks before serving.
