My Flax Bread

  1. Dissolve the yeast, sugar and water.
  2. Let stand until foamy.
  3. Add the eggs, flax, salt and Flour 13.
  4. Mix well.
  5. Stir in enough flour to make a dough.
  6. Turn out onto a floured surface.
  7. Knead until smooth.
  8. Place in an oiled bowl.
  9. Cover.
  10. Set in a warm place.
  11. Let stand 1 hour.
  12. Punch down.
  13. Knead briefly.
  14. Return to bowl.
  15. Cover.
  16. Let rise 1 more hour.
  17. Punch down.
  18. Fill as desired (recipes will follow) or shape into a round.
  19. Brush with egg.
  20. Place on an oiled baking sheet.
  21. Cover.
  22. Let rise 30 minutes.
  23. Heat oven 350F.
  24. Bake 25-45 minutes (depending on filling) or 30 minutes for loaf.
  25. Let cool on a rack.
