Party White Cake
- 2 12 cups sifted cake flour
- 1 teaspoon table salt
- 1 23 cups white sugar
- 1 14 cups milk, divided
- 23 cup shortening
- 4 12 teaspoons double-acting baking powder
- 4 egg whites
- 1 teaspoon vanilla
- Preheat oven to 360F Grease 2 deep 9" cake pans with shortening (at least 1 1/2" deep).
- Sift cake flour before measuring.
- Beat together cake flour, salt, sugar, 3/4 c milk and shortening for 2 minutes on medium speed.
- Add baking powder, egg whites, 1/2 c milk and vanilla.
- Beat another 2 minutes on medium.
- Divide batter between prepared cake pans.
- Bake 30 minutes or until a toothpick inserted in center of cake comes out clean.
- Cool in pan 10 minutes, then turn out onto cooling rack until fully cooled.
- Fill and frost with your favorite frosting.
