Shrimp and new potato stew

  1. Cook the new potatoes in lightly salted, boiling water for 15 minutes or until tender.
  2. Drain and return to the pan.
  3. Meanwhile, finely chop the coriander and crumble the dried chilli.
  4. Heat the oil in large pan and fry the garlic for 1 minute.
  5. Pour in the chopped tomatoes and add the coriander, chilli, and water.
  6. Bring to boil, reduce heat, cover and simmer gently for 5 minutes.
  7. Stir in the shrimp and cooked potatoes and heat briefly until they are warmed through.
