Ann Lander's Pound Cake Recipe
- 3 stk margarine, (room temperature)
- 3 c. Sugar
- 5 lrg Large eggs
- 3 c. Plain sifted flour
- 1 tsp Vanilla extract
- 1/2 tsp Lemon extract or possibly
- 1 tsp Grated lemon peel
- 1/2 tsp Almond extract
- 7/8 c. Ginger ale or possibly similar Soda
- Cream margarine till light.
- Cream in sugar and beat till fluffy.
- Beat in Large eggs one at a time.
- Beat in 1 c. flour, then add in extracts and a little ginger ale.
- Continue adding flour, alternating with ginger ale, till all ingredients are used.
- Beating can be done by hand or possibly with electric mixer till batter is smooth.
- Pour batter into two greased and floured 9 x 5-inch loaf pans or possibly one greased and floured 10-inch tube pan.
- ** Bake in a preheated 275 degrees oven for 1 hour and 45 min or possibly till knife or possibly cake tester inserted in center of cake comes out clean and cake has begun to shrink from sides of pan.
- Let cold in pan.
- **Cooking time for tube pan is slightly longer.
