Won Ton Sandwiches
- Vegetable oil for frying, about 1 cup
- 6 won ton skins, about 3 inches in diameter
- 4 oz. Thai-flavored baked tofu, diced
- 5 oz. precooked edamame
- 1/4 cup cilantro leaves
- 3 Tbs. dry-roasted peanuts
- 3 Tbs. Thai peanut sauce
- Heat oil in large skillet over medium heat.
- When hot, fry won ton skins until golden.
- Using tongs, turn skins over, and fry for several seconds on other side.
- Remove from heat, and place on paper towels to blot extra oil.
- Set aside.
- Combine tofu, edamame, cilantro leaves, peanuts and peanut sauce in mixing bowl, stirring well to combine.
- Divide evenly, mound mixture on skins and serve.
