Baked Chicken with Easy Orange Sauce
- 8 chicken pieces Whole Foods 1 lb For $3.99 thru 02/09
- 2 cups orange juice
- 2 tablespoon brown sugar
- 2 teaspoon french mustard
- 1 tablespoon VEGEMITE
- 1 tablespoon cornflour combined with
- 1/2 cup water
- 2 tablespoon finely chopped basil or parsley
- 2 tablespoon grated orange rind
- Place chicken pieces in a baking dish.
- Combine orange juice, sugar, mustard and Vegemite*.
- Pour over chicken pieces and bake at 200C for 30-35 minutes or until cooked through.
- Baste chicken frequently.
- Remove chicken and keep warm.
- Heat the remaining juices in the baking dish over a medium hot plate.
- Add combined cornflour and water and stir until juices have thickened.
- Pour sauce over chicken, garnish with basil or parsley and rind.
