Cajun Shrimp Guacamole

  1. Sprinkle the Creole seasoning over the cleaned shrimp.
  2. Add 1 Tablespoon of butter in a medium skillet over medium high heat.
  3. Once the pan is hot, add the shrimp and saute for a few minutes on each side just until the shrimp turns pink.
  4. Remove shrimp from the pan and set aside.
  5. In a large bowl, combine the bell pepper, onion, avocado, lime juice, salt and pepper.
  6. Mash together with a fork.
  7. Fold in the Creole shrimp right before serving and sprinkle with another pinch of Creole seasoning.
