Cajun Shrimp Guacamole
- 3 Tablespoons Creole Seasoing
- 1/2 pounds Small Shrimp, Peeled And De-veined
- 1 Tablespoon Butter
- 1/2 whole Red Bell Pepper, chopped
- 1/2 whole Yellow Onion, Chopped
- 3 whole Ripe Avocados, Peeled, Pitted And Chopped
- 1 whole Lime, Juiced
- 1 teaspoon Salt And Pepper, Or To Taste
- Sprinkle the Creole seasoning over the cleaned shrimp.
- Add 1 Tablespoon of butter in a medium skillet over medium high heat.
- Once the pan is hot, add the shrimp and saute for a few minutes on each side just until the shrimp turns pink.
- Remove shrimp from the pan and set aside.
- In a large bowl, combine the bell pepper, onion, avocado, lime juice, salt and pepper.
- Mash together with a fork.
- Fold in the Creole shrimp right before serving and sprinkle with another pinch of Creole seasoning.
