Savannah Shepherd's Pie
- 2 tablespoons oil
- 650 g ground beef or 650 g ground turkey
- 1 onion, finely chopped
- 1 red pepper, finely chopped
- 1 green pepper, finely chopped
- 1 hot chili, finely chopped (optional)
- 4 cloves garlic, crushed
- 2 tablespoons parsley, finely chopped
- 1 (400 g) can black beans, drained
- 1 (400 g) can chopped tomatoes
- 2 tablespoons smooth peanut butter
- 2 teaspoons cocoa powder
- 1 teaspoon chili powder
- 1 kg sweet potato, cooked and mashed
- 2 tablespoons grated cheese (optional)
- salt & freshly ground black pepper
- Set the oven to 180C or 350 degrees F.
- Heat the oil in a frying pan and cook the turkey or beef until it is cooked through.
- Remove from the pan and keep warm.
- Next fry the onion, peppers, garlic and parsley until softened.
- Add the beans, tomatoes, peanut butter and cocoa powder and mix well.
- Stir in the cooked turkey and spread the mixture in a casserole dish.
- Season with salt and pepper.
- Top with mashed sweet potato and the grated cheese.
- Bake for 35 minutes.
- Serve hot with a green salad and some tortillas on the side.
