Chicken Biscuit Recipe
- 1 1/2 lbs. boneless chicken
- 1 tbsp. veg. oil
- 2 cloves garlic, chopped
- 12 ounce. fresh mushrooms
- 1/2 c. minced green onions
- 1 c. dairy lowfat sour cream
- 2 tbsp. flour
- 1 c. skim lowfat milk
- 1/2 c. chicken broth
- 2 tbsp. dry sherry
- Canned biscuits
- Cook chicken in warm oil for 4 to 5 min.
- Remove chicken and set aside.
- Mix garlic, mushroom and onion in skillet.
- Cook 4 to 5 min.
- In a bowl, stir together lowfat sour cream, flour and 1/2 tsp.
- of salt and 1/4 tsp.
- pepper.
- Add in lowfat sour cream mix, lowfat milk and broth to skillet.
- Cook and stir.
- Add in chicken and sherry and heat thoroughly.
- Serve over biscuits.
