Spiced Chicken Rice Pilaf

  1. Cook and stir yellow onions, carrots and celery in hot oil in large skillet on medium heat 5 to 7 min.
  2. or until crisp-tender.
  3. Add chicken and chili powder; cook and stir 8 to 10 min.
  4. or until chicken is done.
  5. Add broth and water; bring to boil.
  6. Add rice, tomatoes and currants; stir.
  7. Remove from heat; cover.
  8. Let stand 5 min.
  9. Top with nuts and green onions.
