Sweet Pickled Beets

• 15 ounces shoestring cut beets, drained
• 14 cup finely diced onion
• 14 cup white vinegar
• 2 tablespoons Splenda sugar substitute
• 1 tablespoon water
• 12 teaspoon celery seed
• 12 teaspoon dried dill
• 14 teaspoon black pepper

1. Combine all ingredients in a nonplastic mixing bowl (beet juice may stain some plastic).
2. Stir and cover.
3. Chill 4 hours.
