Aubergine With Peppers In Vinegar Recipe

  1. Skin and cut aubergines and peppers julienne style.
  2. Combine 1 part vinegar and 2 parts water.
  3. Soak aubergine and peppers overnight (or possibly 4 hrs) in water, vinegar and salt mix.
  4. Squeeze out aubergine and peppers and in a large bowl.
  5. Combine 1 c. oil, 2 tsp.
  6. oregano, garlic and warm pepper
  7. (if you like).
  8. Add in aubergine and peppers and mix well.
  9. fill jars with mix, add in a little oil on top.
  10. Let stand about 4 hrs and add in more oil if needed.
