Breakfast Rolls
- 4 Kaiser bread rolls
- olive oil spray
- 1/4 cup shredded Parmesan cheese
- 20g butter
- 2-4 teaspoons VEGEMITE
- 4 cherry tomatoes, quartered Safeway 1 lb For $1.29 thru 02/09
- 1 tablespoon shredded basil
- 4 eggs
- CUT the top 1/4 off each roll and scoop out the crumbs leaving a 2cm thick crust.
- Reserve the crumbs for another use.
- Place the rolls on a baking tray.
- Place the lids on another tray, lightly spray with oil and sprinkle with some of the Parmesan cheese.
- BRUSH the inside of the rolls with melted butter and then spread the with VEGEMITE.
- Place the tomatoes and basil in the rolls.
- Break an egg into a jug then pour slowly into the roll, moving the tomato as necessary, to avoid overflowing.
- Sprinkle with Parmesan cheese.
- Repeat with remaining ingredients.
- BAKE rolls in a moderate 180 degrees C oven for 15-20 minutes or until the egg is cooked.
- Bake the lids for 3-4 minutes or until the cheese is golden.
- Serve immediately.
