Tofu Stir Fry
- cooking spray
- 1 tablespoon garlic salt
- 1 teaspoon pepper
- 14 ounces firm tofu, drained and cubbed
- 1 garlic clove
- 1 teaspoon fresh ginger
- 2 cups broccoli
- 1 cup bell pepper, sliced
- 1 12 cups cooked brown rice
- 2 tablespoons teriyaki sauce
- 1 teaspoon soy sauce
- 14 cup diced scallion
- Toss the cubbed tofu with the garlic salt and pepper.
- Fry the tofu in a non-stick skillet with the cooking spray until it is crispy.
- Flip it around in the pan often until all sides golden-brown.
- Remove the tofu and add the garlic and ginger.
- Let cooke for about 2 minutes.
- Add more cooking spray if the pan is too dry.
- Add the broccoli and bell pepper to the pan and cook until they are soft, but still have some crunch.
- You may need to put a cover on the pan to help them steam a little.
- Add the brown rice and sauces and mix together in the pan.
- Add the tofu back into the pan and sprinkle with the scallions.
