Wild Rosella and Wasabi Dressing
- 90 millilitres water
- 0 grams sugar
- 20 millilitres red wine vinegar
- 1 x wasabi powder to taste
- 10 grams - Rosella Confit*
- In a small saucepan, combine the water and sugar and dissolve over medium heat.
- Remove from heat and add vinegar.
- Cool before adding rosella extract.
- Take a tablespoonful of liquid and in a small bowl, mix this with the wasabi paste to make a slurry.
- Add this back into the main mixture and taste.
- Repeat with more wasabi, if necessary or desired.
