He-Man's Tuna Noodle Casserole

  1. Cook the noodles in salted water according to package directions, drain, toss to coat with 1/2 of the butter and set aside.
  2. Preheat oven to 400F (200C) F.
  3. In a large saucepan, melt the remaining butter and saute the onion, pimiento (or red bell pepper), green pepper, celery and salt for about 5 minutes.
  4. Add the milk, sour cream and cook over low heat for about 5 or 10 minutes, stirring frequently.
  5. Add the tuna and noodles.
  6. Stir to combine and transfer into a suitably sized casserole dish.
  7. Sprinkle top with ritz crackers.
  8. Bake 20 to 25 minutes.
  9. Garnish with parsley before serving.
  10. Makes enough for 6 hungry folks.
  11. Note: An additional 3 ounce (185g) can of tuna can be added for a meatier casserole.
