Plain Muffins (And Variations)
- 2 cups white flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 2 tablespoons fat (like butter, shortening, or vegetable oil)
- 12 teaspoon salt
- 1 cup milk
- 1 egg
- Follow muffin method of mixing.
- I think Grandma meant to combine the dry and wet ingredients separately, then stir all together until just moistened leaving plenty of lumps.
- Finally, cook at 400 F for 20 to 25 minutes.

- Variations:.
- Whole Wheat Muffins - Substitute 1 c whole wheat flour for 1 c white flour.
- Dates or raisins may be added, if desired.
- Jelly Muffins - Plain muffins plus jelly.
- Fill pans half full of batter, add 1/2 t of jelly to each pan, cover with rest of batter and drop another 1/2 t of jelly on top.
- Date Muffins - Plain muffins plus 1/2 c chopped dates.
- Add chopped dates to dry ingredients.
