Seafood And Okra Gumbo Recipe
- 6 tbsp. butter
- 1/2 c. minced celery
- 1/2 c. minced onion
- 1/2 c. diced green pepper
- 1 garlic clove, chopped
- 6 tbsp. flour
- 1 quart. chicken broth
- 1 can (1 lb.) tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon warm pepper sauce
- 1 bay leaf
- 1/2 teaspoon dry marjoram
- 2 tbsp. minced parsley
- 1/2 teaspoon gumbo file
- 1 pound crabmeat flaked
- 1 pound shrimp, shelled and cleaned
- 1 can (1 lb.) cut okra, liquid removed
- 3 c. warm cooked rice
- Heat butter in deep kettle.
- Add in celery, onion, pepper and garlic.
- Cook till tender.
- Blend in flour; gradually add in chicken broth.
- Add in tomatoes, salt, warm pepper sauce, bay leaf, marjoram and parsley.
- Bring to a boil, cover and simmer 30 min.
- Add in gumbo file, crab meat, shrimp and okra.
- Simmer 10 min.
- Divide rice into 6 soup bowls.
- Spoon gumbo over top.
