Strawberry-Apricot Preserves

• 3 cups mashed ripe apricots
• 3 cups sugar
• 2 (3-ounce) packages strawberry gelatin mix
• Special Equipment: 8 (1/2-pint) canning jars with lids

1. Mix all ingredients together in saucepan and cook for 4 minutes at a rolling boil, stirring frequently.
2. Skim the surface.
3. Pour into sterilized jars and seal*.
